     Low Fat Banana Muffins

Ingredients
2 cups flour
3/4 cup sugar
2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1/2 tsp cinnamon
1/8 tsp nutmeg
1/4 cup canola oil
2/3 cup nonfat milk
 
1 egg, lightly beaten
1 tsp vanilla
2 small ripe bananas, mashed

Instructions
Preheat oven to 350 degrees. Coat a nonstick 12-cup muffin pan with cooking spray or line with paper cups
In a large bowl, stir flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg together. Make a well in the center.
In medium bowl, combine oil, milk, egg, and vanilla. Add wet ingredients to dry mixture, followed by mashed bananas. Stir with a wooden spoon until just combined.
Fill muffin cups 2/3 full. Bake for 18-22 minutes.
Serving Suggestions
Optional extras- 1/2 cup raisins, 1/3 cup miniature chocolate chips
