     Broccoli Bread

Ingredients
1 cup egg substitute
3/4 cup cottage cheese- fat free
1/2 cup fat free sour cream
2 tbs. butter
3/4 tsp. salt
1 1/2 cup onion
1 10oz. Broccoli drained
1 8 1/2 oz. corn muffin mix (jiffy)
cooking spray
 
Instructions
Preheat oven to 400 degrees.
Combine first 5 ingredients in large bowl. Add onion, broccoli, and muffin mix, stir till well blended.
Pour mix into 9x13in baking pan, coated with cooking spray.
Bake for 27 minutes.
