     Summer Sausage

Ingredients
5 lbs ground beef
5 T tender Quick
2 1/2 t cracked pepper
2 1/2 t garlic salt
2 1/2 t whole mustard seed
2 1/2 t liquid smoke
 

Instructions
Knead all ingredients together for 5 minutes. Don't use metal bowl. Cover and place in refrigerator and repeat kneading on the 2nd, 3rd, and 4th days. After kneading on the 4th day, roll into 1 lb logs, place on broiler pan, cook in oven for 4 hours at 175 degrees. Meat will appear red when finished, refrigerate, freeze or eat after cooling.
Haven't tried this one yet. Hope to soon.
Tried 4/22/10. It was pretty good, could use some more seasoning. Will try a couple more recipes to get it right.
