     Coconut rice with shrimp and cilantro

Ingredients
Rice
coconut milk
Salt
lime zest
sesame seeds (Thai markets carry both white and dark sesame seeds)
shrimp
cilantro
garlic
chili
 
lime juice

Instructions
Prepare coconut rice by soaking in water for at least 3 hours – or overnight. Figure about 1/3 cup rice per person. To cook, you simply steam the rice over water. (A colander or strainer that fits inside a pot will work fine if you do not have a steamer.) The rice should take anywhere from ˝ an hour to 40 minutes.
When tender, remove rice and stir in a cup of coconut milk and a healthy pinch of salt. I also like to grate in some lime zest.
When cool enough to handle, form into little flat balls, dip in sesame seeds (Thai markets carry both white and dark sesame seeds) to coat the bottom and top with shrimp and cilantro. You can purchase frozen cooked shrimp for this – or sauté your own in some garlic, chili and lime juice.
