Heat oil , add chicken pieces (I coated in matzah meal) salt and
brown until golden brown. Transfer to plate
Add onion and cook until golden. Stir in rest (not parsley).
Return chicken to pan and heat to boil.
Reduce heat to low, cover and simmer, spoon olive mixture over
chicken until loses pink color...25-35 min. Garnish with parsley.
Good sauce. Could make day ahead....adjust rosemary....may need more.
