Preheat oven to 425 degrees. Place foil inside pastrsy shell. Partially
fill with rice or baking pie weights. Bake 10 minutes. Remove foil
and rice or weights. Continue baking 5 min. Lower oven to 375
degrees.
Brown sausage and onion. Drain. Add apples, lemon juice, sugar
and pepper flakes. Cook on medium high, 4 minutes, stirring
constantly. (Apple will be tender and no liquid left). Cool.
Spoon sausage mixture into pastry shell. Top with cheese. Whisk
eggs, half-and-half, salt and pepper. Pour over sausage mixture.
Bake 35 to 45 minutes. (Center should come clean with toothpick).
Let stand 10 minutes.
