Roughly chop the watercress (you do not need to
remove the tough stalks). Peel, core and roughly
chop the pear.

Put the watercress and pear in a blender or food
processor with the wheatgerm and blend until smooth.
Scrape the mixture down from the side of the bowl if
necessary.

Add the yogurt, seeds and lemon juice and blend
until combined. Thin with a little mineral water of
too thick.
|
|
|
Put several ice cubes in the bottom of a tall glass.
Fill the glass to just below the brim with the
Vitality Juice, leaving enough room to decorate with
a few sprigs of chopped watercress on top.

For a non-dairy version, use yogurt made from goat's milk, sheep's milk or soya. A large apple can be used instead of the pear.
