     Muesli Smoothie

Ingredients
1/4 cup ready-to-eat dried apricots
1 piece preserved stem ginger, plus 2tbsp syrup from the ginger jar
scant 1/2 cup natural muesli (granola)
scant 1 cup semi-skimmed (low-fat) milk
 

Instructions
Using a sharp knife, chop the dried apricots into the slices or chunks. Chop the preserved ginger.
Put the apricots and ginger in a blender or food processor and add the syrup from the ginger jar with the muesli and milk.
Process until smooth, adding more milk if necessary, to make a creamy drink. Serve in wide glasses.
Serving Suggestions
This drink makes a tasty breakfast but can also be used as a dessert after a summer meal. If serving it as a dessert, partner it with poached peaches
