     Zingy Papaya Fruit Salad

Ingredients
2 large ripe papayas
juice of 1 fresh lime
2 pieces preserved stem ginger, finely sliced
 

Instructions
Cut the papayas in half lengthways. Scoop out the seeds, using a teaspoon. With a sharp knife, cut the flesh into neat, thin slices.
Arrange the papaya slices on a platter. Squeeze the lime juice over the papaya and sprinkle with the sliced stem ginger. Serve immediately.
Serving Suggestions
Try using passion fruit pulp instead of the ginger, or substitute two ripe, peeled and stoned (pitted) mangoes for the papaya.
