     Baked Meatballs

Ingredients
1/2 lb ground pork
1/2 lb ground veal or lamb
1/2 lb ground round
5 oz frozen spinach, thawed and drained thoroughly
1/2 cup finely grated parmesan
1 whole egg
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried parsley
1 teaspoon garlic powder
 
1 teaspoons kosher salt
1/2 cup bread crumbs, divided
Fresh ground black pepper

Instructions
Preheat the oven to 375 degrees. In a large bowl, combine the pork, lamb, ground beef, spinach, cheese, egg, basil, parsley, garlic powder, salt, pepper,and 1/4 cup of the bread crumbs. Using your hands, mix all ingredients until well incorporated.
Place the remaining 1/4 cup bread crumbs into a small bowl. Roll meat mixture into 1 1/2 inch balls. Roll in the bread crumbs and place in miniature muffin tin cups.
Bake for 20 mins or until golden and cooked through.
