Ingredients
about 1 lb. Farmer's Cheese
2 eggs (one per 7-8 oz cheese)
1 1/2 tablespoon sugar
1 1/2 teaspoon vanilla extract
 

Instructions
pre heat oven 275 degrees Use non stick cookie sheet or spray metal cookie sheet In bowl, combine all ingredients with fork or spatula until well mixed.
Spread 1/2 cheese mixture on cookie sheet and form egg shape about 1/2 inch thick. Do the same with the other half. Surround each cheese shape with folded paper towel to absorb any liquid that may weep from the cheese during baking.
Bake about 40-45 min. until cheese egg is firm thoughout. You can test by touching the top of the cheese forms. They should be firm to the touch but not hard. The top of the cheese will be just slightly darkened but not crusted or brown.
Cool and then slide each cheese form on to serving plate. Refrigerate until used.
