     Lemon Doodles

Ingredients
4 tsp lemon zest
2 TBL lemon juice
1 c walnuts
1/2 c sesame seeds
2 TBL agave nectar
pinch of sea salt
1/3 c unsweetened coconut, shredded
 

Instructions
Put the lemon zest, juice, walnuts, sesame seeds, agave, and salt in a food processor and blend for about 10 sec. Scrape the mixture from the sides of the bowl with a spatula and blend again for 15 seconds. Repeat once more until a moist, seedy dough ball forms.
Scrape the dough into a medium bowl. Place the coconut in a seperate, smaller bowl.
Pinch off pieces of the dough and roll into balls about 1 ich in diameter. Toss the balls in coconut shreds to coat.
Store in a tightly sealed container in the refrigerator for up to 1 week or in the freezer for up to 2 months.
