     Hearty Vegetable Soup

Ingredients
1 Can Vegetable Stock (14 oz)
1 Can Tomato Puree (28 oz)
1 Can Tomato Paste (6 oz)
8 Cups Water
1 Large Carrot Chopped
2 Stalks of Celery Chopped
2 Red Potatoes Chopped
1 1/2 C Broccoli Crowns
8 Button Mushrooms
 
1 Tbsp Black Mustard Seeds
4 Pinches Ground Black Mustard
2 tsp Fine Sea Salt
1 tsp Garlic Powder
2 Tbsp Onion Powder
1 1/2 Tbsp Ground Coriander
3 Tbsp Chopped Parsley, 2 Tbsp Dried Thyme Leaves, 3 Tbsp Dried Basil
3 Tbsp Dried Oregano, 4 Dashes Black Pepper
6 Handfuls of Pasta of Choice

Instructions
In a large saucepan or stock pot, add vegetable stock and water and bring to a boil. Add diced carrots and boil for 5 minutes. Stir in tomato puree and tomato paste. Allow to boil for another 5 minutes.
Add all other veggies, cover for five minutes, then stir in herbs and spices. Simmer this for 30 minutes, partially covered. Stir in pasta and simmer, partially covered for 10 minutes.
Allow soup to cool before serving, allowing the flavors to work together. Serve warm.
