Start the starter the night before you want the pancakes. The starter
stays pretty good on the counter in the winter months, (if your house
is on the cool side)if you are not going to use it at least 1-2 times a
week, keep it in the refrigerator. Or if you add even 1 T each of
flour and water once in awhile to keep it active.
For the pancakes mix the dry ingredients in one bowl and the wet in
another, then combine them both. Cook on a greased, preheated 350
griddle. Cook as you would regular pancakes.
WAFFLES same as pancakes dry together, wet together then combine both.
The only change to the above ingredients are- 1/4 cup oil and 3/4 cup
milk.
I grew up using butter and sugar so that is how I showed my kids. Now
we are starting on the grandkids. Matthew who is three, calls them
Taco Pancakes because we roll them up. Rueben who is one, likes them
also.
