     Chicken Marsala

Ingredients
4 boneless skinless chicken breasts
1/2 t salt, 1/4 t pepper
3/4 c shredded Italian blend cheeses, or
1/4 c each-mozzerella, provolone and asiago
3 T sun dried tomatoes (oil packed)
2 T chopped fresh parsley
1/2 t dried oregano
1 T olive oil
1 10 oz pkg baby portabella mushrooms, sliced
 
3/4 c chicken broth
1/3 c Marsala wine
1 t flour
2 T butter
additional parsley for garnish

Instructions
Pound chicken to 3/4 inch. Sprinkle with salt and pepper. Put chicken on a jelly roll pan in a 375 oven for 15 minutes, turn and bake an additional 10 minutes more.
Combine cheeses, spices and tomatoes. Divide evenly between the four pieces of chicken. To make sauce- Heat oil over medium heat, add mushrooms and cook until soft. Whisk broth, wine anf flour and pour into skillet. Bring to a boil, stir occasionaly, about 4 minutes. Remove from heat, stir in butter. Pour sauce over chicken and serve.
Serving Suggestions
Garlic parmesan mashed potatoes.
