     THERESA’S CHEESY SPINACH & ARTICHOKE DIP

Ingredients
1 Can Artichoke Hearts in Brine (not marinade)
1 Package Frozen Chopped Spinach
˝ Cup Sour Cream
˝ Cup Mayonnaise
1 Cup Shredded Mozzarella (or more to make extra cheesy)
Ľ Cup Parmesan cheese
8 oz Package Cream Cheese
1 Tbsp Onion Soup Mix
˝ to 1 tsp Garlic Salt
 
Chopped Green Chile to taste (optional)
Seeded and Diced Roma Tomato

Instructions
Cook Spinach according to package directions and drain. Preheat oven to 325o. Drain and chop artichoke hearts and mix with Spinach and add remaining ingredients, except tomatoes, and mix. Pour mixture into a 1 Qt. dish and bake for 45 minutes or until cheese is melted and corners of baking dish start to brown. Top with diced tomatoes and serve hot with celery sticks, chips, or “Melba Snack” Crackers.
