Cook Spinach according to package directions and drain. Preheat oven to 325o. Drain and chop artichoke hearts and mix with Spinach and add remaining ingredients, except tomatoes, and mix. Pour mixture into a 1 Qt. dish and bake for 45 minutes or until cheese is melted and corners of baking dish start to brown. Top with diced tomatoes and serve hot with celery sticks, chips, or “Melba Snack” Crackers.
