     Chopped summer salad

Ingredients
1 yellow bell pepper cut into thin strips
1 red bell pepper cut into thin strips
1/2 lb green beans cut into 1/4 inch pieces
1/2 lb asparagus cut into 1/4 inch pieces
1 jalapeno seeded and finely diced
1 large english cucumber diced
1 small red onion finely diced
1 bunch parsley - chopped
2 ears of corn on the cob - kernels removed
 
4 roma tomatoes - seeds removed and chopped
4 T evoo
3 T rice wine vinegar
S&P to taste

Instructions
Cook corn, cool and remove kernels. Blanch green beans and asparagus 2 minutes, cool. Combine all chopped vegetables and toss with evoo and vinegar. Gets better as it sets.
