     Apricot Sweet Potatoes

Ingredients
1-1 lb. can sweet potatoes
1-1 lb. can apricot halves
1-1/4 c. brown sugar
1/8 t. cinnamon
1 c. pecans
2 t. butter
2 T. corn starch
 

Instructions
Drain apricots, save juice to make 1 cup. Put sweet potatoes in a 6 x 9-inch pan.
Mix sugar, cornstarch, cinnamon; add apricot juice and bring to a boil. Boil 2 minutes. Add apricots, butter and pecans. Pour over sweet potatoes.
Bake at 350 degrees for 30 minutes. Add grated orange rind, if you have it.
If necessary, add orange juice to apricot juice to make 1 cup liquid.
