     Quesadilla Casserole

Ingredients
2 t chili powder
1 t ground cumin
1 t minced garlic
1/2 t oregano leaves
1/2 t crushed red pepper flakes
1 lb ground beef
1/2 c chopped onion
2 cans tomato sauce (8 oz each)
1 can ranch stlye black beans drained
 
1 can whole kernal corn drained
1 sm can diced green chilies
1 small can sliced olives
6 tortillas (8 inch)
2 cups shredded cheddar cheese

Instructions
Brown beef and onion on medium heat. Drain. Add everything else except the cheese and tortillas. Bring to a boil, reduce heat to simmer and cook for 5 minutes.
Spread 1/2 cup of the beef mixture in bottom of a 9x13 baking dish that has been sprayed with non-stick spray. Top with three of the tortillas, half the beef and half the cheese. Repeat layers. Bake in a preheated 350 oven for 15 minutes or until heated through. Let stand 5 minutes before serving.
The recipe didn't call for sliced olives or specific black beans. I used the Ranch Style Black Beans. Also the tortillas were supposed to be left whole, I cut them in 8ths with a pizza cutter and layered them. I also used a little more cheese because we all like lots of cheese.
