1 1/2 tblsp freshly squeezed lemon juice (about 1/2 of medium lemon)
1 tablespoon Dijon mustard
1 teaspoon honey or brown sugar
Freshly ground black pepper
Kosher salt
Extra-virgin olive oil
4 cups of baby spinach
1/4 cup grated Swiss cheese
1/2 avocado, cubed
1/2 small red onion finely chopped
Additions- sauteed mushrooms
Instructions
Set medium saute pan over medium heat and add bacon. Cook, turning once or twice until crispy. Drain on paper towels and crumble into bite-size pieces, reserving the fat in the pan.
Add lemon juice, mustard, honey and several grinds of black pepper to fat and whisk until well combined. Dip leaf of spinach in dressing to taste and add salt if needed and whisk up to 1/4 cup of olive oil if neeeded.
