     Quick Lemon Mousse

Ingredients
1/3 c. fresh lemon juice, strained
2 1/4 t. unflavored gelatin ( from 1 packet)
1/2 c. sugar
Coarse salt
1 c. cold heavy cream
1 c. fresh blackberries ( or berries of your choice)
 

Instructions
In small bowl, combine lemon juice & 1/4 c. cold water. Sprinkle gelatin on top & let set until softened, 2 mins. Fill a med. bowl with ice water. In a small saucepan combine gelatin mixture, sugar & pinch of salt over medium heat & stir until gelatin & sugar dissolve, 4 mins. Pour gelatin mixture back into small bowl & set in ice bath. Stir until mixture reaches room temp, 1 min.
In large bowl, whisk cream until soft peaks form. Pour cooled gelatin mix in whipped cream & whisk until soft peaks return. Divide evenly among 4 - 8 oz dishes or cups & place in freezer until mousse springs back lightly when pressed, 10 mins.
Serve topped with a fresh fruit of choice.
If you have more time to prepare - reduce gelatin in 1 1/2 t. Instead of ice bath let set in frig. for 1 - 1/2 hrs to set.
