     Dad's Beef Bourguignon

Ingredients
2- 9 lb beef chuck cut into 1 1/2 inch cubes
1 garlic clove
1 bouquet garni
1/4 cup olive oil
4 onions thinly sliced
1 Tbl flour
1 cup red Burgundy
6 carrots cut into 1 inch pieces
salt and pepper
 

Instructions
Season meat with salt and peper. Heat oil till hot. Brown meat in bunches till brown. Remove meat and add onions at a lower heat for 10min until limp. Sprinkle flour. Add wine. Scrape bottom of pot to remove brown bits. Bring to boil.
Return meat. Add carrots, garlic, bouquet garni and enough water so that the liquid covers meat by a third. 2/3 meat, 1/3 water. Boil then turn to simmer, uncovered, for 2 hours. Stir and scrape bottom of pot ever 15-20min. until meat is tender. Remove any scum on top. Remove bouquet garni when ready to serve.
Serving Suggestions
Serve with mashed potaoes and braised leeks.
