1 whole chicken breast (2 halves) skinned, boned, cut into bite-size pieces
1 tbs. soy sauce
1 tsp. cornstarch
3 tbs. cooking oil
1/2 cup cashews
1 c. sliced muchrooms
1/2 tsp. crushed garlic
1 med. onion, cut in 8 wedges, separated
1/4 tsp. ground ginger
Instructions
Stir cornstarch and soy sauce together and stir into chicken; set aside.
Heat oil in large frying pan, add cashews and stir until browned. Spoon into bowl and set aside
Pour chicken mixture into pan and fry untill meat is no longer pink in center. Add onion in halfway through cooking, add mushrooms, garlic, and ginger in last minute of cooking
Stir in cashews and serve over rice.
