4 lbs Potatoes
|
|
1 lb Bacon, chopped
|
|
1 cup Mayonnaise
|
|
1/4 cup Red Wine Vinegar
|
|
1/4 cup Brown Sugar
|
|
2 T Dijon Mustard
|
|
3 stalks Celery, diced
|
|
1-2 bunches Green Onions, chopped
|
|
Salt and Pepper, to taste
|

Instructions |
|
|
Boil potatoes, drain. Cool and cut into cubes. Cook bacon, reserve 2
T of the drippings. Mix rest of ingredients, add potatoes and bacon.
Chill.

BBQ POTATO SALAD- Add sliced hard-boiled eggs, shredded
cheddar cheese and BBQ sauce. Topped with diced cilantro.
