     Grilled Shrimp, Corn & Black Bean Salad

Ingredients
3 cups chopped seeded tomatoes
15 oz can black beans, drained and rinsed
1 cup green onions, chopped
3/4 cup chopped fresh cilantro/mint
3/4 cup chopped red onion
6 cups iceberg lettuce
2 ears of corn, husked
24 large prawns
24 large black tortillas or fresh bread
 
DRESSING-
5 tbsp lime juice
3/4 cup olive oil
6 tbsp chopped fresh cilantro/mint
1/2 jalapeno pepper, chopped (heat)
1 tbsp ground cumin
salt and pepper to taste

Instructions
Prepare salad dressing. Combine lime juice and whisk in olive oil; add rest; cover and chill. Combine tomatoes, beans, green onions, red onion and cilantro. Cover and chill. Brush corn with dressing; grill until brown. Cut corn off cob and add to tomato mixture. Brush shrimp with salad dressing. Grill until opaque. Cool. Add lettuce to salad. Toss well. Add remaining salad dressing and toss well. Top with prawns. Serve with tortillas or bread.
