Measure 2 3/4 cups of the flour into a medium mixing bowl. Add the sugar,baking powder,baking soda,salt and nutmeg, and whisk everything together.

In a large bowl,whisk together the buttermilk, water,egg and vanilla extract. Stir the flour mixture into the liquid ingredients until you have a well-blended butter. Use some of the remaining flour to dust your work surface and turn the dough into a 1/2 inch squares.

Now it's time to fry the beignets be sure to ask an adult to help you do this. Heat 2 inches of vegetable oil in a heavy saucepan on the stovetop until the temperuture reaches 325 degrees on a deep fat thermometer. Monitor the temperature while you're cooking and if it starts to rise, turn the burner down or off momentarily.

Carefully drop 3 dough squares into the oil. Fry them for 3 minutes, turn them over and continue frying for 3 minutes using a slotted spoon, transfer the beignets to a wire rack set a top paper towels to drain. Fry the remaining beignets. Dust them all with plenty of confectioners sugar and enjoy!Makes 14-16
