Pound chicken very flat. Mix bread crumbs with 1/2 c Parmesan cheese. Dip chicken in egg/water mixture and coat with crumbs. Refrigerate at least 10 minutes. add chicken to skillet with melted butter and oil and brown.
Preheat oven to 350. Pour half of spaghetti sauce into shallow baking pan. Place chicken in sauce, place a slice of Mozzarella on top, cover with remaining sauce. Top with leftover mozzarella and parmesan. Bake 20 minutes or until cheese melts.
Can be prepared and frozen and reheated. Bake just before serving.
