4 thick slices Country Bread (Rosemary is also yummy)
GARNISH- (poached eggs, optional)
1/2 cup Flat Leaf Parsely
1 Lemon, zest
1 Orange zest
2 T White Wine Vinegar
4 Eggs
Instructions
Preheat medium soup pot over medium heat with olive oil. Add
sausage and cook 3 minutes. Add garlic, onions, clelery, carrots,
potatoes, thyme, salt and pepper. Cook 5 minutes. Add tomatoes
and chicken broth. Bring to boil then turn down heat and simmer
10 minutes.
Toast bread, rub with garlic. Drizzle olive oil over top. Bread is
placed in the bottom of each bowl before pouring soup.
OPTIONAL GARNISH- Poach eggs in water and white vinegar. Top
with parsley, lemon zest and orange zest. Place egg on top of soup
in each bowl.
