Ingredients
2 Cups Plain Yoghurt
1 med. Red Onion - finely chopped
2-3 Green Chilis - chopped finely
1 inch Ginger - minced
1 TBLS Garlic - minced
1 1/2 Large Cucumbers - 1 -rough shredded 1/2 -small cubes
1 Lemon - juiced
1 1/2 tsp Salt or to taste
1/2 tsp. Cumin Seeds
 
1/2 tsp. Black Pepper Corns
1/4 tsp. Chili Powder
1/2 tsp. Black Mustard Seeds

Instructions
Peel the cucumber and scoop out seeds. Pour the yoghurt into a glass bowl and coursly grate the cucumber over it. Add diced cucumber. Pour in the lemon juice. Fold thoroughly.
Make a paste of your ginger and garlic and fold into the cucumber-yoghurt mixture. Add chopped onions. Add chopped chilis. Mix.
Heat the Cumin and Black Mustard seeds in a dry saucepan until they smoke. Put in a pestle with peppercorns and salt and grind. Add to your Raita. Add Chili Powder.
Cover and set in the refridgerator for at least one hour.
Serving Suggestions
Great with rice, masala, curry, Cools the stomach and is perfect for summer.
