     Fresh Summer Zucchini Fritters

Ingredients
4 Large Zucchini - course grated
1 C All Purpose Flour
3 Green Chilis
1 small bunch Mint - chopped
2 Tbl Ghee or Olive Oil ( 0r you can use an Olive Oil spray)
3 Large Eggs - beaten
9 oz. Feta Cheese - crumbled
1/2 small Lemon Rind
1/2 small Lemon Wedges
 
2 Tbls Cornstarch
1 tsp Salt
1/4 tsp Black Pepper
1/4 tsp Cayenne
1 tsp Paprika
1 small bunch Parsley - chpped
5 -6 Green Onions - finely chopped
1 tsp Ginger - fresh and finely grated
1/2 small Lemon Juice

Instructions
Course shred Zucchini on a dry towel and let dry for approx 20 minutes.
Add flour, salt pepper, paprika ,and cornstarch together in a bowl and mix thoroughly. Mix in green onions, feta, parsley, mint, green chili, ginger, cayenne. Add lemon juice. Add beaten eggs.
Fold in zucchini until thoroughly distributed. Heat frying pan on medium heat and add oil. Add a 1/2 Cup of zucchini mixture in pan and press down to flatten. Fry approx 3 -4 minutes on either side or until browned. Remove from the heat and dry on a rack.
Serving Suggestions
Serve with lemon wedges, mint chutney, and or lemon pickle.
