Ingredients
3 C. All Purpose Flour
1 C. Wheat Flour
1 tsp. Salt
1 pkg. Yeast
1 tsp. Sugar
2 Tbls. Olive Oil
1 1/2 C warm water
Preheat oven to 500 with rack at its lowest position.
 

Instructions
Mix sugar and yeast together. Add 1/2 C. water and stir until the mix is dissolved. Let sit in a warm place for 15 minutes.
Thoroughly mix 2 C. All Purpose Flour, 1 C. Wheat Flour, and salt. Make a small depression in the center and slowly add the yeast mixture. Very slowly add 1 C. warm water and mix completely.
Knead dough until it is not sticky, gradually adding in the last 1 C. All Purpose flour. Knead for approx. 20 minutes. Put in a warm glass bowl and pour 2 Tbls Olive Oil over and coat dough thoroughly. Cover with seran wrap, a towel and set in a warm place until it rises to double its size, approx. 1 hour.
Roll out dough to a thick rope and break off 12 plumb size pieces. Keep them as a ball and set them on a plate, not touching and covered, for another 15 minutes. Roll out on a floured board to 5 inch cirles about 1/8 - 1/4 inch thick. Place 4 on a cookie sheet cook for 4 minutes until they puff up on one side, and then flip them and cook for 2 minutes on the other side.
Serving Suggestions
Great with Humus.
