     Lentil and Bulgar Soup

Ingredients
2 T olive oil, plus more for drizzling
1 medium carrot, finely chopped
1 clery stalk, finely chopped
1 shallot, thinly sliced
6 C water (or more)
1 C green lentils, or brown lentils, rinsed and picked over
1/2 C bulgur wheat
2-3 T red white vinegar
salt and pepper
 

Instructions
Heat oil in medium saucepan over medium heat. Cook carrot,celery, and shallot until tender, about 6 minutes. Add water and lentils, bring to a boil; reduce heat, simmer, partially covered, until lentils are tender, about 20. Do not let lentil dry out, add water if needed. Stir in Bulgar,cook partially covered, until soft but still chewy, about 5 minutes. You can have this more like soup--add water if needed---or more firm, like rice. Fork or spoon? I ate it with a fork.
Drizzle with vinegar to taste. Salt and pepper to taste. Drizzle with oil.
Words 4 good eats-----I was a vegetarian for 12 years. I would have loved this then and I love it now.This is a real comfort food. Your kids might like this one, it's a little weird for them, but easy to get used to. Let me know how it goes over. G.
