Preheat oven 425 degrees. Toss carrots with oil on a rimmed baking sheets. Season with salt and pepper. Roast until carrots are caramelized and tender, about 25 minutes.
Transfer carrots to bowl, toss with feta and parsley.
Words 4 good eats----roasting carrots brings out an incredible amount of sweetness. The cheese and parsley in this recipe balances the sweet. I may never eat a carrot any other way again!
