     Custard Rice Pudding

Ingredients
1/2 c raw rice
3 c milk
1/4 tsp salt
4 eggs
3/4 c sugar
2 tsp vanilla
1/2 tsp ground nutmeg
 

Instructions
Heat rice in 4 quart pan over medium heat with milk and salt to just boiling. Reduce to low. Cover and simmer 30 minutes until tender. Meanwhile in medium bowl, beat eggs, sugar and vanilla. Stir into rice. Heat to boiling and sprinkle with nutmeg. Serve warm.
