     SESAME CHICKEN SALAD

Ingredients
1/4 C dark maple syrup
2-3 TBL tamari, dark soy sauce
1/4 C sweet hot mustard
1 1/3 LB chicken tenders
salt and ground pepper
1/2 C sesame seeds
1/4 C vegetable oil
DRESSING
1 inch fresh gingerroot grated or minced
 
2 TBL rice vinegar
1/4 C apricot all- fruit spread
1/4 C vegetable oil
SALAD
1 bag (10oz) mixed baby greens
1/4 english cucumber halved lengthwise sliced on angle
1/2 C shredded carrots
4 scallions thinly sliced on an angle
Fried Chinese noodles for garnish

Instructions
Combine syrup, soy sauce and sweet hot mustard in a large bowl. Season chicken tenders with salt and pepper on both sides. Add shicken tenders to the bowl and coat. Set aside
Preheat a large nonstick skillet over medium-high heat. Spread sesame seeds on a sheet of wax paper or into a shallow dish. Coat the pan with a thin layer of oil.Coat chicken in sesame seeds and cook chicken in small batches. 3 minutes on each side and remove to plate
Whisk ginger, vinegar, and the apricol all-fruit together in a medium bowl then stream in the oil while continuing to whisk the dressing
Combine all of the salad ingredients in a bowl. toss with dressing and serve, topping with sesame chicken tenders. Toss some crunch into salad with fried noodles
