     French Onion Soup

Ingredients
6 Large. Yellow Onions - thinly sliced separated
1/2 C butter
1/4 C sherry
2 tsp sugar
2 Tbl Olive Oil
2 Tbls unbleached Flour
1/2 tsp dry mustard
2 cloves Garlic - fine mince
14 1/2 oz Chicken Broth and Beef Broth
 
2 Tbls Worcester Sauce
2 12 oz Beer
1 tsp salt
2 Tbls Parsley
1/4 tsp nutmeg
1/2 tsp dillweed, pepper, celery seed
5 Beef boullion cubes
1/8 tsp marjoram leaves
1 Bay leaf, 2 C swiss cheese - shredded, 1 Load French Bread

Instructions
Add onions to butter, oil, sugar and slowly brown approx. 25 - 30 minutes. Make sure to stir frequently. Add flour, mustard, garlic, and cook approx. 3 minutes. Add sherry and stir just short of boiling. Add remaining ingredients.
Bring to a soft boil, reduce heat and simmer for 1 hour. Refrigerate overnite to mellow. Reheat.
Roast French bread rounds and place on top of soup, cover with shredded swiss cheese and broil until very light golden brown on top.
