     Steamed New Potatoes with Mint and Parsley

Ingredients
1/4 tsp salt to taste (optional)
1-1/2 lb small red potatoes, quartered lengthwise
2 tbsp sour cream
1-1/3 tbsp fresh mint, minced
1-1/3 tbsp parsley, minced
2 tbsp unsalted butter
 

Instructions
In a steamer basket over boiling water steam potatoes, covered, for 10-12 minutes, or until just tender.
While potatoes are steaming, in a bowl stir together mint, parsley, butter, sour cream, and salt and pepper to taste. Add the potatoes to herb mixture and toss well.
