Drain garbanzo beans and reserve the liquid.
|

Put all the ingredients in a food processor plus about 2 tablespoons of the reserved liquid
from the beans.
|

|
Process for 5 minutes until very smooth. Add more liquid if needed. Adjust salt and
seasoning.
|

|
Three variations- Before processing add 1)1 tablespoon fresh oregano 2)2 tablespoons fresh
chives 3)1/4 cup chopped cilantro leaves
