     Ellen's No Fail Pot Roast

Ingredients
Chuck Roast
Cream of Mushroom Soup
Onion Soup mix
Large Onion, sliced into rings
mushrooms
olive oil
salt and pepper
garlic pwd
flour
 

Instructions
Line a 13x9 baking dish or roasting pan with tin foil going both ways, with enough to close over the roast. Spray with cooking spray. Place a layer of onion rings and sprinkle with flour.
Season roast with salt, pepper and garlic. Sear roast in super hot pan with olive oil on ALL sides.
In seperate bowl, mix together soups and spread over the roast. Sprinkle with flour. Place the rest of the onions and mushrooms on top and close the foil.
Bake at 325 for about 30 min per pound of roast. For a large roast you may want to double the rest of the ingredients.
Serving Suggestions
Tear it up the next day and serve it over egg noodles.
