2 boneless, skinless chicken breasts, cooked and cut into bite sized pieces
crushed tortilla chips
sliced avocados
shredded cheese
chopped green onions
Instructions
In stock pot, saute onion and garlic in oil until soft. Stir in chili pwd, oregano, tomatoes, broth and water. Bring to a boil and simmer for 5-10 min.
Stir in corn, hominy, chiles, beans, cilantro and chicken.
Simmer for another 10 min.
Top with crushed chips, avocado, cheese and green onions.
