     Cream Puffs

Ingredients
1/2 c. butter
1 c. water
1/4 t. salt
1 c. flour
4 large eggs
1 small box of vanilla instant pudding
1 1/2 c. milk
1/2 tub cool whip
1/4 t. almond extract
 
2 squares semisweet chocolate or 1/2 c. chocolate chips
2 T. butter
1 1/2 c. pwd sugar
1 T. milk
1-2 T. hot water (to handle the way you want)

Instructions
For pastries- Bring 1 c. water, 1/2 c. butter and salt to a boil and add flour all at once. Cool 10 min. Add eggs 1 at a time stirring between. Dough will break and come back together each time. Spoon onto non stick, or greased pan. Bake at 375 for 35-40 min. Poke immediately when removed from oven and cool on wire rack. Cut the tops off and remove any excess dough inside.
For filling- Mix pudding and milk and let set up well. Fold in cool whip and extract. Pipe into puffs and replace the tops.
For Icing- Melt chocolate, 2 T. butter, pwd sugar and 1 T. milk together. Stir in hot water until it reaches the consistency you want. Drizzle or spoon onto puffs.
