     HOLLANDAISE SAUCE

Ingredients
2 egg yolks
1/3 c cream
salt
pepper
lemon juice [ generous amount]
1/4 cup butter.
 

Instructions
Stir ingredients into a double boiler until the mixture begins to thicken. Take off the fire, and stir in 1/4 Cup of butter [ broken into small bits with your fingers].
This mixture may be set aside and re heated when wanted.
