     Leftover Turkey Casserole

Ingredients
2 or more C Turkey - cooked and cubed
1 C Helmans/Best Foods Mayonaise
1 can Cream of Mushroom soup
3/4 C. Onions - finely chopped
1 C. Celery - chopped
1 Large Bag Potato Chips - crushed
2 C. Milk
1/2 C walnuts - course chopped
1 tsp Lemon Juice
 
1/2 tsp Cayenne Pepper
1 Tbl butter
salt and pepper to taste
4 Hard boiled eggs - quartered
Rice

Instructions
Pan fry onions and celery in butter until golden.
In a large oven safe dish mix chopped turkey, mayo, milk, walnuts, soup, eggs, and onion-celery mix. Add lemon juice and stir.
Cook at 350 for 40 - 50 minutes, just until it bubbles through.
Cover with crushed potato chips and return to oven at 375 for 10 minutes or until chips start to brown.
Serving Suggestions
Serve over rice.
