1 - 16oz. can whole tomatoes chopped and undrained
1 - 15oz. can tomato sauce
1 tsp. sugar
1 tsp. dried basil
1/2 tsp. salt
1 - 16oz carton ricotta cheese
1/4 cup grated Parmesan cheese
1 1/2 tsp. dried oregano
2 cups (8oz) shredded mozzarella cheese
2 Tablespoons grated Parmesan cheese
Instructions
Cook noodles according to package directions; drain and set aside. Remove and discard casings from sausage. Cook sausage, onion, and garlic in a large skillet, stirring until sausage crumbles; drain.
Stir in 2 Tablespoons parsley, tomatoes, tomato sauce, sugar, basil, and salt; bring to a boil. Reduce heat, and simmer 45 minutes or until mixture is slightly thickened, stirring occasionally.
Combine remaining 1 Tablespoon parsley, ricotta cheese, 1/4 cup grated Parmesan cheese, and oregano; set aside.
Spread 1 cup meat mixture in a lightly greased 13 X 9 inch baking dish. Top with 4 noodles, 1 cup ricotta cheese mixture, 2/3 cup mozzarella cheese, and 4 more noodles. Spread remaining ricotta cheese mixture over noodles, and top with 1 cup meat mixture, 2/3 cup mozzarella cheese, and remaining 4 noodles. Top with remaining meat mixture and mozzarella cheese; sprinkle with 2 Tablespoons Parmesan cheese. Bake at 350 degrees for 45 minutes or until bubbly. Let stand 10 minutes before serving.
