     Kansas Scalloped Corn

Ingredients
1 (12 oz) whole corn (drained)
1 (12 oz) can cream corn
2 eggs
1 small can evaporated milk
4 tbsp butter
1 (12 oz pkg) dices swiss cheese
2 tbsp instant minced onion
1/2 tsp salt
1/2 tsp pepper
 
2 cups crushed saltine crackers

Instructions
Place all ingredients into a large bowl and mix well. Pour into a greased baking dish and bake for 1 hour at 325. Let stand for 5 minutes before serving. This recipe can be doubled but use a 9x13 pan.
