     Loaded Chocolate Chip Cookies

Ingredients
1 1/4 cups all purpose flour
1/2 tsp baking soda
1 stick (1/2 cup) butter, softened
1/2 cup firmly packed brown sugar
1/4 cup granulated sugar
1 large egg
2 cups semisweet or bittersweet chocolate chips
1/2 tsp vanilla extract (optional)
 

Instructions
Preheat oven to 375 degrees. Line two baking sheets with parchment or foil and set aside. In a small bowl, combine flour with baking soda.
In a bowl of a standing mixer fitted with a paddle attachment, beat together the butter, brown sugar, and granulated sugar until combined, then beat in the egg and vanilla extract, beating just until smooth. Don't overbeat!! Remove the bowl from the mixer and stir in the flour mixture. Stir in the chocolate chips.
Drop tablespoons of dough onto the prepared sheets and bake for 12-15 minutes or until they are deep gold and firm. Slide the papers off the pans unto cooling racks. After the cookies have cooled, detach from paper and store in an airtight container. Freeze for longer storage.
