     Chicken with Yogurt and Almonds

Ingredients
6 boneless, skinless chicken breasts
1-1/4 cups plain low fat yogurt
1 onion, finely chopped
1/4 lb slivered almonds, toasted
2 cloves garlic, crushed
1 tsp paprika
2-2/3 tbsp vegetable oil
1 cup chicken stock
 

Instructions
Heat oil in a frying pan over a medium-low heat. Add chicken and brown over medium heat. Remove from pan and set aside.
In the same pan, sauté onion, garlic, and paprika for 1-2 minutes; add stock and allow to simmer. Return chicken to pan; cook for 15-20 minutes, or until cooked through. Remove from heat and stir in yogurt. Top with almonds.
