     Mexican Lasagna

Ingredients
2 pounds Ground Beef.
2 Tbls Chili Powder
2 Tbls EVOO (Olive Oil)
2 Tsp cumin (optional)
2 cups cheddar cheese (add as little or as much as u would like)
½ Red onion chopped
1 15 oz can black, pinto, or refried beans. (I use refried)
1 cup salsa
8 soft shell taco tortillas
 
Sour cream and onions for garnish

Instructions
Preheat oven to 425. In a large skillet med high heat add 2 tbls of EVOO add beef and seasonings (chili powder, cumin, salt and pepper). Add red onion. Cook till beef is done. add salsa Heat 2-3 minutes.
In a separate pan (or micro) heat refried beans up and Cut tortillas in half.
spray a 8x8 baking pan with non stick spray. spoon meat mix in bottom sprinkle with cheese layer tortillas on top (4 ½ pcs straight edge touching the pan) spread beans on tortillas, then meat mixture and sprinkle with cheese continue to layer.
Bake 13-15 min or until cheese is brown. Top with olives, sour cream and onion if you want.
