     Quiche Lorraine Squares

Ingredients
1 pkg piecrust mix or refrigerated crust
1 beaten egg white
1 lb of bacon cooked,drained and crumbled
3 C grated swiss cheese
6 eggs
4 C light cream
1 1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp white pepper
 
dash of cayenne

Instructions
Prepare piecrust mix. Roll out to 18x15 inch rectangle. Line jelly roll pan...Brush bottom and sides wth 1 beaten egg white...Refrigerate
Heat oven to 375. Fry bacon, drain and crumble. Sprinkle 3 C grated swiss over bacon. In bowl beat eggs ,light cream, salt, nutmeg, pepper and cayenne...Pour over cheese. Bake 35-40 min. Cool 10 min and cut into squares
