     Muffaletta stuffed sandwich

Ingredients
1 large round or long Italian bread
2 jars marinated artichoke hearts, drained
1/4 C each Kalamata and green olives, pitted ,chopped
3/4 C sundried pesto,
1/2 C sun dried tomatoes (coarsley chopped)
2 Tbl balsamic vinegar
1/4 lb sliced roast beef
1 pkg slice provolone
1 jar roasted peppers
 
1/4 lb genoa salami
romaine lettuce

Instructions
Slice off the top third of bread. Scrape out soft bread. In md bowl combine artichoke and olives. In small bowl combine pesto, sun dried tomatoes and vinegar. Spread pesto mixture on both sides of inside of bread. Layer bottom of bread with 1/2 roast beef, provolone,remaining roast beef, peppers, salami, remaining cheese and lettuce. Spoon artichoke olive mixture on top of lettuce. Replace lid and top of loaf and press down firmly...Wrap sandwich tightly with plastic wrap with foil... Refrigerate overnight
